This pie is rich, creamy, and perfectly tart. It has a great balance between the sweetness from the crust and the cream cheese layer and the tartness of the raspberries. My favorite part may be the crust! Who doesn’t love vanilla wafers?
I found this recipe while I was looking through a cookbook that has been passed down for many generations in my husbands family. This recipe is from 1988 and from a sweet lady named Alberta. One of my favorite things is to find these old recipes, try them out and add modern twists to them.
