Air Fryer Chicken Summer Casserole


When I think of a summer casserole, I remember my mama’s summer garden and all the delicious zucchini and squash we had from that garden. My mama was a school teacher for most of my childhood which meant she had the summers off to spend time with us and enjoy her own break. She absolutely loved her garden, mainly because she grew up on a farm working beside her parents and siblings. As much as I absolutely hated waking up early to help weed that garden, it produced some of my all time favorite food.

If there is a recipe that I think could be transitioned to the air fryer, I will definitely give it a try! This was one of those recipes. I first made this recipe in a skillet on the stove and it turned out pretty yummy. The next day when eating some of the leftovers, I decided to throw it in the air fryer in hopes that the veggies would not be mushy. It turned out SO much better in the air fryer. The veggies were crisp and the it gave it much more flavor. So the next time I made this recipe I jumped straight to the air fryer and have never gone back.
