Growing up my dad LOVED carrot cake, but it wasn’t always my favorite thing. When I married Porter I discovered that him and his family love carrot cake so I decided to step out of my comfort zone and work on a carrot cake recipe. The bundt pan honestly changes everything for me. The way the pan is set up makes this cake equally fluffy and moist. Make sure you fully grease or spray the inside of the bundt pan to avoid any sticking!
The frosting on this cake is to die for. It is a frosting that I use on various desserts because it is perfectly simple and delicious. I can know testify with my dad that carrot cake is one of the best!
