My weakness in life is desserts. I always tell my husband that I am a person that has 4 meals a day breakfast, lunch, dinner, and dessert. When I found out my mother-in-law loved lemon cookies I was super excited to make her some of these. These cookies have a sugar cookie base with a hint of lemon topped with the most delicious cream cheese frosting. They are the perfect balance between tart and sweet.
Be careful because you will want to eat these all in one sitting! It is safe to say that my mother-in-law approved of these cookies, and still talks about them almost every time we see them. Now that the family has discovered these cookies, they are a constant request which I do not mind since that means I get to sneak some of that frosting in the process.
