You will all soon learn that the love for Mexican food is real in our home. Both my husband and I grew up in Arizona (which most definitely has the best Mexican food in the states). However, since we now live in Florida, great Mexican food has to be made inside our home. If someone knows an incredible Mexican restaurant here in Florida post it in the comments!
While I absolutely love Mexican food, enchiladas are not high on my list. I believe that it is a texture thing for me since at times they are get a little soggy and drown in the sauce. This is what I used to believe before this recipe. These enchiladas are a perfect balance between the sweetness of the honey, and the spicy/savory flavors from the spices and enchilada sauce. People have told me that they could eat these once a week, and I may join them when they do!
