Instant Pot Cilantro Lime Chicken Burrito Bowls


Chicken burrito bowls are one of our go-to lunch options. This recipe may look overwhelming at first, but most of the ingredients are spices and items that you probably already have in your kitchen! I love this recipe too because it is one you can tweak along the way with your own perferences, even though it is quite perfect already!

I typically meal prep on Sundays for myself and my husband to make sure we have healthy lunch options throughout the week. As a high school teacher, thaat 25 minute lunch break is a little “me time” that is desperately needed most days. I love that I can pop the leftovers of this recipe in the microwave, add in some lettuce and pico de gallo, and have a delicious and sustaining meal to get me through the rest of the day.
