Asparagus is probably my favorite vegetable. I grew up as the kid that wouldn’t even touch vegetables, especially anything green. My poor parents were saints for putting up with my picky eating. They say your taste buds change every 7 years so in time I learned to be less picky and try new foods.
This is my favorite way to cook asparagus! On my husband’s side of the family, they know this recipe as “Amy’s cheesy asparagus”. My mother-in-law is one of the best home cooks I have met and I am so lucky to have her pass on her recipes to me. This recipe is quick and so simple. Just stick it in the oven and let the oven roast it up. This side can be eaten with literally any meal! Plus asparagus is a great vegetable that flushes out any toxins that are in your tummy.
