Sweet Potato Breakfast Skillet


Do you ever go out to eat and see someone at the next table over with a breakfast skillet or scramble and think man that looks delicious? I have done that countless times! One of my Grandpa West’s favorite things to do when we came to visit was go out to breakfast at Village Inn or a local small ma and pop restaurants. He would often get the “country skillet” breakfast and as a little girl eating my fluffy pancakes, I always thought that was a grown up meal. Now that I am a “grown up”, I absolutely love skillet breakfasts!

This recipe is packed with so much flavor, with not too many ingredients. The best part is you probably have many of the ingredients chilling in your refrigerator. I definitely suggest mixing this one up. Add some extra veggies or protein and see how you like it! I know understand the love my Granpda had for these breakfasts and wish I could share this one with him.
