I have some family members that absolutely love all things spring baking- the lemons, citrus, sugar cookies, etc. On the other hand, I also have family members that LOVE fall baked goods. We are talking pumpkin everything, cinnamon and nutmeg, breads, etc. I honestly could not choose a side. Let’s be honest, I love ALL baked goods. My sister in law, Emily, once asked me if I would be willing to make a batch of cookies that she wanted to give to a boy and tell him that she made it so he would think that she was super talented in the kitchen. I first told her that she didn’t need me, but then went ahead and made them. The boy still probably has no idea!
These pumpkin cookies are one of the first things that comes out of my oven during the fall season. While I have always lived in a warm state, these cookies make it feel like it is time for sweaters, hot cocoa, and fall colors. Fall is my favorite season of the year so look forward to all the fall inspired dishes.
